Hand harvest Chenin off our Yungarra vineyard. Destemed into concrete egg for natural ferment plunged daily. Once malo lactic fermentation complete. Basket pressed to another concrete egg & left to rest for three months months. Simply racked to hand bottling on a stormy day.
