Sobremesa 'All Gas No Brakes' Tripel Mixed Culture 2024

A Sobremesa spin on a classic. Brewed back in December 2024 with Pilsner & Chit Malt from Voyager (NSW). The aroma is warm and inviting — eucalyptus, grandma’s orange marmalade, and star anise. This is all tied in w/ a beautiful brett. character reminiscent of aged hay. Flavours of lemon squash, fennel bulb, and wildflower honey develop across the palate. Bright acid, clean, dry, and lightly warming — the ethanol present, but not intrusive. Contemplative & refreshing.
